Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 2 cups fish or seafood broth
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the tomatoes, bell pepper, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
- Pour in the fish or seafood broth and bring to a simmer.
- Add the shrimp and cook for 5-7 minutes, or until they turn pink and opaque.
- Season with salt and pepper, then stir in the cilantro and lime juice.
- Serve the Cazuela de Camarones hot, accompanied by rice or crusty bread.
