Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 cups fish or seafood broth
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the tomatoes, bell pepper, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
  3. Pour in the fish or seafood broth and bring to a simmer.
  4. Add the shrimp and cook for 5-7 minutes, or until they turn pink and opaque.
  5. Season with salt and pepper, then stir in the cilantro and lime juice.
  6. Serve the Cazuela de Camarones hot, accompanied by rice or crusty bread.
