Ingredients

  • 2 chayote squash, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 cups shredded mozzarella cheese
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced chayote squash to the skillet and cook for 10-15 minutes, or until the chayote is tender.
  3. Preheat the oven to 350°F (175°C).
  4. In a mixing bowl, combine the cooked chayote mixture, shredded mozzarella cheese, sour cream, milk, and chopped cilantro. Season with salt and pepper to taste.
  5. Transfer the mixture to a greased casserole dish and bake for 20-25 minutes, or until the top is golden and bubbly.
