Ingredients
- 2 chayote squash, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 cups shredded mozzarella cheese
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced chayote squash to the skillet and cook for 10-15 minutes, or until the chayote is tender.
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cooked chayote mixture, shredded mozzarella cheese, sour cream, milk, and chopped cilantro. Season with salt and pepper to taste.
- Transfer the mixture to a greased casserole dish and bake for 20-25 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
