Ingredients

  • 2 cups dried black beans
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tomato, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Rinse the black beans and soak them in water overnight.
  2. In a large pot, sauté the onion and garlic until fragrant.
  3. Add the red bell pepper, tomato, cumin, and paprika. Cook for 5 minutes.
  4. Drain the soaked beans and add them to the pot.
  5. Pour in the vegetable broth and season with salt and pepper.
  6. Cover and simmer for 1 hour, or until the beans are tender.
  7. Garnish with fresh cilantro before serving.
