Cazuela de Frijoles is a traditional Colombian bean casserole that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 2 cups dried black beans
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tomato, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions
- Rinse the black beans and soak them in water overnight.
- In a large pot, sauté the onion and garlic until fragrant.
- Add the red bell pepper, tomato, cumin, and paprika. Cook for 5 minutes.
- Drain the soaked beans and add them to the pot.
- Pour in the vegetable broth and season with salt and pepper.
- Cover and simmer for 1 hour, or until the beans are tender.
- Garnish with fresh cilantro before serving.
