Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- 1 pound white fish fillets, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tomatoes, diced
- 1 cup fish or seafood stock
- 1 cup coconut milk
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the bell peppers and tomatoes, and cook for 5 minutes.
- Stir in the cumin, paprika, and cayenne pepper. Season with salt and pepper.
- Pour in the fish or seafood stock and coconut milk. Bring to a simmer.
- Add the shrimp, mussels, and fish to the pot. Cover and cook for 10-15 minutes, or until the seafood is cooked through.
- Stir in the fresh cilantro and adjust the seasoning if needed.
- Serve the Cazuela de Mariscos hot, accompanied by rice or crusty bread.
