Cazuela De Mariscos: Colombian Seafood Stew

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound mussels, cleaned and debearded
  • 1 pound white fish fillets, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 1 cup fish or seafood stock
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the bell peppers and tomatoes, and cook for 5 minutes.
  3. Stir in the cumin, paprika, and cayenne pepper. Season with salt and pepper.
  4. Pour in the fish or seafood stock and coconut milk. Bring to a simmer.
  5. Add the shrimp, mussels, and fish to the pot. Cover and cook for 10-15 minutes, or until the seafood is cooked through.
  6. Stir in the fresh cilantro and adjust the seasoning if needed.
  7. Serve the Cazuela de Mariscos hot, accompanied by rice or crusty bread.
