Cazuela De Mariscos (spicy Seafood Cazuela)

Ingredients
- 1 lb mixed seafood (shrimp, mussels, squid, etc.)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup fish or seafood stock
- 1 cup white wine
- 2 tomatoes, diced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Add the mixed seafood to the pot and cook for 2-3 minutes.
- Pour in the fish or seafood stock and white wine. Add the diced tomatoes, paprika, cayenne pepper, salt, and pepper. Stir to combine.
- Simmer the cazuela for 20-25 minutes, or until the seafood is fully cooked and the flavors have melded together.
- Sprinkle the chopped cilantro over the cazuela before serving.
