Cazuela De Mariscos (spicy Seafood Cazuela)

Ingredients

  • 1 lb mixed seafood (shrimp, mussels, squid, etc.)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup fish or seafood stock
  • 1 cup white wine
  • 2 tomatoes, diced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
  2. Add the mixed seafood to the pot and cook for 2-3 minutes.
  3. Pour in the fish or seafood stock and white wine. Add the diced tomatoes, paprika, cayenne pepper, salt, and pepper. Stir to combine.
  4. Simmer the cazuela for 20-25 minutes, or until the seafood is fully cooked and the flavors have melded together.
  5. Sprinkle the chopped cilantro over the cazuela before serving.
