Ingredients
- 1 whole chicken, cut into pieces
- 2 cups fresh or frozen corn kernels
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 6 cups chicken broth
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown on all sides, about 5 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the onion and garlic. Sauté until the onion is translucent, about 3 minutes.
- Add the paprika, cumin, and oregano to the pot. Stir to coat the onions and garlic with the spices.
- Return the chicken to the pot and add the chicken broth. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
- Add the corn, carrots, potatoes, bell pepper, and green beans to the pot. Simmer for an additional 20 minutes, or until the vegetables are tender and the chicken is cooked through.
- Season the soup with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
