  • 2 cups chicken broth
  • 2 tsp paprika

  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken thighs with salt, pepper, and 1 teaspoon of paprika.
  2. In a large, deep skillet or casserole dish, heat some olive oil over medium-high heat. Brown the chicken thighs on both sides, then remove and set aside.
  3. In the same skillet, sauté the onion, garlic, and bell peppers until softened.
  4. Add the rice, diced tomatoes, chicken broth, cayenne pepper, cumin, and remaining paprika to the skillet. Stir to combine.
  5. Place the browned chicken thighs on top of the rice mixture. Bring to a simmer, then reduce the heat to low, cover, and cook for 45 minutes or until the rice is tender and the chicken is cooked through.
