Centollo A La Gallega (galician Style Crab)
Centollo a la Gallega, or Galician Style Crab, is a traditional dish from the Galicia region of Spain. This flavorful and aromatic crab dish is a true delicacy, perfect for seafood lovers.
Ingredients
- 2 live crabs
- 1/2 cup olive oil
- 4 garlic cloves, minced
- 2 teaspoons sweet paprika
- Salt to taste
- 4 small potatoes
- 1 tablespoon coarse sea salt
Instructions
- Fill a large pot with water and bring to a boil. Add the live crabs and cook for 15 minutes. Remove the crabs and let them cool.
- Once the crabs are cool enough to handle, remove the top shell and clean out the insides. Cut the crabs into quarters.
- In a pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Add the sweet paprika and stir for a minute. Then add the crab pieces and cook for 5 minutes, stirring occasionally.
- Meanwhile, boil the potatoes in a separate pot with the coarse sea salt until tender. Drain and set aside.
- Arrange the crab pieces and boiled potatoes on a serving platter. Drizzle with the garlic and paprika-infused oil from the pan.
