Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the pork chunks with salt, pepper, smoked paprika, and ground cumin.
  2. Heat olive oil in a large pot over medium-high heat. Add the pork and cook until browned on all sides. Remove the pork from the pot and set aside.
  3. Reduce the heat to medium and add the chopped onion, garlic, and sliced red bell pepper to the pot. Cook until the vegetables are softened.
  4. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Allow the wine to reduce by half.
  5. Return the pork to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 1.5 to 2 hours, or until the pork is tender.
  6. Adjust the seasoning with salt and pepper, if needed. Serve the Cerdo a la Andaluza hot, with your choice of side dishes.
