Ingredients
- 2 lbs pork shoulder, cut into chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 cup dry white wine
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the pork chunks with salt, pepper, smoked paprika, and ground cumin.
- Heat olive oil in a large pot over medium-high heat. Add the pork and cook until browned on all sides. Remove the pork from the pot and set aside.
- Reduce the heat to medium and add the chopped onion, garlic, and sliced red bell pepper to the pot. Cook until the vegetables are softened.
- Pour in the white wine and scrape up any browned bits from the bottom of the pot. Allow the wine to reduce by half.
- Return the pork to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 1.5 to 2 hours, or until the pork is tender.
- Adjust the seasoning with salt and pepper, if needed. Serve the Cerdo a la Andaluza hot, with your choice of side dishes.
