Ingredients

  • 3 lbs pork shoulder, boneless
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 cup mango puree
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 6 hamburger buns

Instructions

  1. Preheat the oven to 325°F.
  2. Season the pork shoulder with salt, black pepper, and garlic powder.
  3. Place the seasoned pork shoulder in a roasting pan and cover with foil. Roast in the preheated oven for 3-4 hours, or until the meat is tender and easily shreds with a fork.
  4. In a saucepan, combine the mango puree, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, and cayenne pepper. Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce thickens.
  5. Remove the pork from the oven and shred it using two forks. Place the shredded pork in a large bowl and pour the mango BBQ sauce over it. Mix until the pork is evenly coated with the sauce.
  6. Toast the hamburger buns in the oven or on a skillet. Serve the mango BBQ pulled pork on the toasted buns.
