Ingredients
- 1 lb fresh white fish fillets, cut into small cubes
- 1 cup lime juice
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- 2 tomatoes, diced
- 1/2 cup cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- Salt and pepper to taste
Instructions
- In a large glass bowl, combine the fish and lime juice. Make sure the fish is completely submerged in the juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the lime juice.
- Once the fish is ready, drain off the lime juice and add the red onion, bell pepper, tomatoes, cilantro, and jalapeño to the bowl. Season with salt and pepper, and gently toss to combine.
- Chill the ceviche for at least 30 minutes before serving to allow the flavors to meld together.
