Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 cup fresh lime juice

- 1 avocado, diced

Instructions
- In a large bowl, combine the shrimp and lime juice. Make sure the shrimp is fully submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the shrimp turns pink and opaque.
- Once the shrimp is cooked in the lime juice, drain the excess liquid.
- Add the red onion, cherry tomatoes, cilantro, jalapeño, and avocado to the shrimp. Gently toss to combine.
- Season with salt and pepper to taste.
- Refrigerate the ceviche for at least 30 minutes before serving to allow the flavors to meld together.
