Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1 jalapeño, seeded and diced
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shrimp and lime juice. Make sure the shrimp is fully submerged in the lime juice. Cover and refrigerate for 15-20 minutes, or until the shrimp turns pink and opaque.
  2. Once the shrimp is cooked in the lime juice, drain the excess liquid.
  3. Add the red onion, cherry tomatoes, cilantro, jalapeño, and avocado to the shrimp. Gently toss to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate the ceviche for at least 30 minutes before serving to allow the flavors to meld together.
