Ingredients

  • 1 lb boneless, skinless chicken thighs, thinly sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 stalks lemongrass, white part only, finely chopped
  • 1-inch piece of galangal, minced
  • 3-4 red chilies, finely chopped
  • 1 tsp turmeric powder
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a mortar and pestle, pound the lemongrass, galangal, red chilies, and garlic into a smooth paste.
  2. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the lemongrass paste and cook for 2-3 minutes until fragrant.
  3. Add the sliced chicken and cook until browned and cooked through.
  4. Stir in the turmeric powder, fish sauce, oyster sauce, and sugar. Add the sliced bell pepper and onion, and stir-fry for another 2-3 minutes.
  5. Season with salt to taste and garnish with fresh cilantro.
