Ingredients
- 1 lb boneless, skinless chicken thighs, thinly sliced
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 stalks lemongrass, white part only, finely chopped
- 1-inch piece of galangal, minced
- 3-4 red chilies, finely chopped
- 1 tsp turmeric powder
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a mortar and pestle, pound the lemongrass, galangal, red chilies, and garlic into a smooth paste.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the lemongrass paste and cook for 2-3 minutes until fragrant.
- Add the sliced chicken and cook until browned and cooked through.
- Stir in the turmeric powder, fish sauce, oyster sauce, and sugar. Add the sliced bell pepper and onion, and stir-fry for another 2-3 minutes.
- Season with salt to taste and garnish with fresh cilantro.
