Cha Nom Banh Chok (stir-fried Glass Noodles)

Ingredients
- 8 oz (225g) glass noodles
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1 cup cabbage, shredded
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sugar
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Soak the glass noodles in hot water for 5-7 minutes until softened. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the onion and garlic, and stir-fry for 2-3 minutes until fragrant.
- Add the carrot, bell pepper, and cabbage, and continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to one side of the pan and add the soaked glass noodles to the empty space.
- Pour the soy sauce, oyster sauce, and sugar over the noodles, and gently toss to combine with the vegetables.
- Continue to stir-fry for 3-4 minutes until the noodles are heated through and evenly coated with the sauce.
- Season with salt and pepper to taste, and sprinkle with chopped green onions before serving.
