Ingredients
- 1 large eggplant, cut into cubes
- 1/2 lb pork, thinly sliced
- 3 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1/2 cup water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the garlic and stir-fry for 30 seconds until fragrant.
- Add the pork and stir-fry until browned.
- Add the onion and eggplant, and stir-fry for 2-3 minutes.
- In a small bowl, mix together the oyster sauce, soy sauce, fish sauce, sugar, and water. Pour the mixture into the wok and stir well.
- Cover and cook for 5-7 minutes, or until the eggplant is tender.
