Ingredients

  • 1 large eggplant, cut into cubes
  • 1/2 lb pork, thinly sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1/2 cup water
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the garlic and stir-fry for 30 seconds until fragrant.
  3. Add the pork and stir-fry until browned.
  4. Add the onion and eggplant, and stir-fry for 2-3 minutes.
  5. In a small bowl, mix together the oyster sauce, soy sauce, fish sauce, sugar, and water. Pour the mixture into the wok and stir well.
