Cha Traop Doung (stir-fried Tofu With Vegetables)

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1 cup of broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup of snap peas
  • 3 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of sugar
  • 1/2 teaspoon of black pepper
  • 1/4 cup of vegetable broth
  • 2 green onions, chopped

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the tofu cubes and stir-fry until golden brown, then remove from the pan and set aside.
  3. In the same pan, add the garlic and stir-fry for 30 seconds.
  4. Add the broccoli, bell pepper, carrot, and snap peas to the pan, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the tofu to the pan with the vegetables.
  6. In a small bowl, mix together the soy sauce, oyster sauce, sugar, black pepper, and vegetable broth. Pour this sauce over the tofu and vegetables, and stir-fry for another 2-3 minutes.
  7. Garnish with chopped green onions before serving.
