Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup walnuts
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup pomegranate juice
  • 1 tsp red pepper flakes
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. In a food processor, pulse the walnuts until finely ground.
  2. Season the chicken pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and brown on all sides. Remove from the skillet and set aside.
  4. In the same skillet, sauté the chopped onion until translucent. Add the minced garlic and cook for another minute.
  5. Stir in the tomato paste, ground walnuts, pomegranate juice, red pepper flakes, and ground coriander. Season with salt and pepper.
  6. Return the browned chicken pieces to the skillet, cover, and simmer for 30-35 minutes until the chicken is cooked through and the sauce has thickened.
  7. Garnish with fresh parsley before serving.
