Ingredients
- 1 whole chicken, cut into pieces
- 1 cup walnuts
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup pomegranate juice
- 1 tsp red pepper flakes
- 1/2 tsp ground coriander
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- In a food processor, pulse the walnuts until finely ground.
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken pieces and brown on all sides. Remove from the skillet and set aside.
- In the same skillet, sauté the chopped onion until translucent. Add the minced garlic and cook for another minute.
- Stir in the tomato paste, ground walnuts, pomegranate juice, red pepper flakes, and ground coriander. Season with salt and pepper.
- Return the browned chicken pieces to the skillet, cover, and simmer for 30-35 minutes until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh parsley before serving.
