Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 potatoes, diced

  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Stir in the curry powder, turmeric, cumin, and paprika, coating the meat and onions with the spices.
  4. Pour in the beef broth and coconut milk, then add the sliced bell pepper and diced potatoes.
  5. Season with salt and pepper, then bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the beef is tender and the potatoes are cooked through.
