Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup white vinegar
- 1/2 cup soy sauce
- 1 head of garlic, minced
- 1 teaspoon black peppercorns
- 3 bay leaves
- 1 tablespoon cooking oil
Instructions
- In a large bowl, combine the chicken thighs, white vinegar, soy sauce, minced garlic, black peppercorns, and bay leaves. Marinate the chicken for at least 30 minutes, or overnight for best results.
- Heat the cooking oil in a large pot over medium-high heat. Remove the chicken from the marinade, reserving the liquid, and sear the chicken on both sides until golden brown.
- Pour the reserved marinade over the chicken and bring to a boil. Reduce the heat to low, cover, and simmer for 45 minutes, or until the chicken is tender and fully cooked.
- Once the chicken is cooked, remove it from the pot and transfer to a serving dish. Increase the heat to medium-high and let the sauce simmer and reduce until slightly thickened.
- Pour the thickened sauce over the chicken and serve hot with steamed rice.
