Chamorro Chicken Adobo

Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1 cup white vinegar
  • 1/2 cup soy sauce
  • 1 head of garlic, minced
  • 1 teaspoon black peppercorns
  • 3 bay leaves
  • 1 tablespoon cooking oil

Instructions

  1. In a large bowl, combine the chicken thighs, white vinegar, soy sauce, minced garlic, black peppercorns, and bay leaves. Marinate the chicken for at least 30 minutes, or overnight for best results.
  2. Heat the cooking oil in a large pot over medium-high heat. Remove the chicken from the marinade, reserving the liquid, and sear the chicken on both sides until golden brown.
  3. Pour the reserved marinade over the chicken and bring to a boil. Reduce the heat to low, cover, and simmer for 45 minutes, or until the chicken is tender and fully cooked.
  4. Once the chicken is cooked, remove it from the pot and transfer to a serving dish. Increase the heat to medium-high and let the sauce simmer and reduce until slightly thickened.
  5. Pour the thickened sauce over the chicken and serve hot with steamed rice.
