Chamorro Chicken Empanadas

Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro
  • 1/2 cup grated cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 12 empanada wrappers
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix the shredded chicken, onions, bell peppers, cilantro, cheese, garlic powder, paprika, salt, and pepper.
  2. Place a spoonful of the chicken mixture onto the center of each empanada wrapper.
  3. Brush the edges of the wrapper with the beaten egg, then fold the wrapper in half to enclose the filling. Press the edges firmly to seal.
  4. Place the empanadas on a baking sheet lined with parchment paper, and brush the tops with the remaining beaten egg.
  5. Bake in a preheated oven at 375°F for 20-25 minutes, or until golden brown.
