Chamorro Chicken Empanadas

Ingredients
- 2 cups shredded cooked chicken
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup chopped cilantro
- 1/2 cup grated cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 12 empanada wrappers
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix the shredded chicken, onions, bell peppers, cilantro, cheese, garlic powder, paprika, salt, and pepper.
- Place a spoonful of the chicken mixture onto the center of each empanada wrapper.
- Brush the edges of the wrapper with the beaten egg, then fold the wrapper in half to enclose the filling. Press the edges firmly to seal.
- Place the empanadas on a baking sheet lined with parchment paper, and brush the tops with the remaining beaten egg.
- Bake in a preheated oven at 375°F for 20-25 minutes, or until golden brown.
