Ingredients
- 2 lbs chicken thighs, bone-in
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup corn kernels
- 1 cup green beans, chopped
- 8 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 8 small corn tortillas
Instructions
- In a large pot, combine the chicken thighs, onion, and garlic. Cook over medium heat until the chicken is browned and the onions are soft.
