Chamorro Chicken Soup Tacos (kadu Tacos)

Ingredients

  • 2 lbs chicken thighs, bone-in
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 8 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 small corn tortillas

Instructions

  1. In a large pot, combine the chicken thighs, onion, and garlic. Cook over medium heat until the chicken is browned and the onions are soft.
