Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup unsalted butter, melted
  • 3 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the coconut milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
