Ingredients
- 2 cups fresh corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup chopped green onions
- 1/4 cup grated cheese
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, green onions, grated cheese, egg, salt, and black pepper. Mix until well combined.
- Heat vegetable oil in a skillet over medium heat.
- Scoop about 1/4 cup of the corn mixture and carefully drop it into the hot oil. Flatten slightly with a spatula.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
