Chamorro Corn Fritters

Ingredients

  • 2 cups fresh corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup chopped green onions
  • 1/4 cup grated cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the fresh corn kernels, all-purpose flour, cornmeal, green onions, grated cheese, egg, salt, and black pepper. Mix until well combined.
  2. Heat vegetable oil in a skillet over medium heat.
  3. Scoop about 1/4 cup of the corn mixture and carefully drop it into the hot oil. Flatten slightly with a spatula.
  4. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
