Chamorro Fried Rice

Ingredients

  • 3 cups cooked white rice
  • 1/2 cup diced ham
  • 1/2 cup diced chicken
  • 1/2 cup mixed vegetables (carrots, peas, corn)
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 eggs, beaten
  • 3 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  2. Add the diced ham and chicken, and cook until browned.
  3. Push the meat to one side of the skillet and add the beaten eggs to the other side.
  4. Scramble the eggs until cooked, then mix with the meat.
  5. Add the remaining vegetable oil to the skillet and sauté the minced garlic until fragrant.
  6. Stir in the mixed vegetables and cook until tender.
  7. Add the cooked rice to the skillet and pour the soy sauce over the rice.
  8. Stir well to combine all the ingredients and cook for an additional 5 minutes.
  9. Season with salt and pepper to taste.
  10. Remove from heat and serve hot.
