Chamorro Fried Rice

Ingredients
- 3 cups cooked white rice
- 1/2 cup diced ham
- 1/2 cup diced chicken
- 1/2 cup mixed vegetables (carrots, peas, corn)
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 eggs, beaten
- 3 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add the diced ham and chicken, and cook until browned.
- Push the meat to one side of the skillet and add the beaten eggs to the other side.
- Scramble the eggs until cooked, then mix with the meat.
- Add the remaining vegetable oil to the skillet and sauté the minced garlic until fragrant.
- Stir in the mixed vegetables and cook until tender.
- Add the cooked rice to the skillet and pour the soy sauce over the rice.
- Stir well to combine all the ingredients and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
