Chamorro Pancit

Ingredients

  • 1 pound rice noodles
  • 1/2 pound pork, thinly sliced
  • 1/2 pound shrimp, peeled and deveined
  • 1/4 cup soy sauce
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, julienned
  • 1/2 cabbage, shredded
  • 3 green onions, chopped
  • 3 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Soak the rice noodles in warm water for 10 minutes, then drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the pork and cook until browned.
  3. Add the shrimp, onion, and garlic, and cook until the shrimp turns pink.
  4. Pour in the soy sauce and chicken broth, then bring to a boil.
  5. Add the carrots, cabbage, and green onions, and simmer for 5 minutes.
  6. Stir in the rice noodles and cook for an additional 5 minutes, or until the noodles are tender.
  7. Season with salt and pepper to taste.
