Chamorro Red Rice

Ingredients

  • 2 cups jasmine rice
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 1/2 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the jasmine rice, tomato sauce, salt, and black pepper, and cook for 2 minutes, stirring constantly.
  4. Pour in the water and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork before serving.
