Chamorro Shrimp Fried Rice

Ingredients

  • 2 cups cooked white rice
  • 1 pound shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 eggs, beaten
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the shrimp and cook until pink and opaque, then remove from the wok and set aside.
  3. Add the remaining tablespoon of oil to the wok and sauté the garlic until fragrant.
  4. Push the garlic to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Add the mixed vegetables to the wok and stir-fry until they are tender-crisp.
  6. Stir in the cooked rice and soy sauce, then add the cooked shrimp back to the wok.
  7. Toss everything together until well combined and heated through.
  8. Season with salt and pepper to taste.
  9. Remove from heat and serve hot.
