Chamorro Shrimp Fried Rice

Ingredients
- 2 cups cooked white rice
- 1 pound shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 eggs, beaten
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the shrimp and cook until pink and opaque, then remove from the wok and set aside.
- Add the remaining tablespoon of oil to the wok and sauté the garlic until fragrant.
- Push the garlic to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the mixed vegetables to the wok and stir-fry until they are tender-crisp.
- Stir in the cooked rice and soy sauce, then add the cooked shrimp back to the wok.
- Toss everything together until well combined and heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
