Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 2 tbsp oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, finely chopped
  • 1 green chili, finely chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp paprika
  • Salt to taste
  • 1 cup water
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add the minced garlic, grated ginger, and green chili. Sauté for another 2 minutes.
  3. Add the chopped tomatoes and cook until they soften and the oil separates.
  4. Stir in the ground cumin, ground coriander, turmeric, garam masala, paprika, and salt. Cook for 2 minutes.
  5. Add the drained chickpeas and water. Simmer for 15-20 minutes until the curry thickens.
  6. Garnish with fresh cilantro and serve hot with rice or naan.
