Chana Masala (creamy Chickpea Curry)

Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Pour in the diced tomatoes and cook for 5 minutes, stirring occasionally.
  5. Add the ground cumin, coriander, garam masala, turmeric, and cayenne pepper. Cook for 2 minutes.
  6. Stir in the drained chickpeas and coconut milk. Simmer for 20 minutes, stirring occasionally.
  7. Season with salt to taste and garnish with fresh cilantro before serving.
