Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 2 tbsp oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp paprika
  • Salt to taste
  • 1 cup water
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add the onions, garlic, ginger, and green chilies. Sauté until the onions are soft and translucent.
  2. Add the tomatoes and cook until they are soft and mushy.
  3. Stir in the ground cumin, coriander, turmeric, garam masala, paprika, and salt. Cook for 2-3 minutes.
  4. Add the chickpeas and water. Simmer for 15-20 minutes until the curry thickens.
  5. Garnish with fresh cilantro and serve hot with rice or naan.
