Chana Palak Bai (chickpea And Spinach Stew)

Ingredients

  • 2 cups chickpeas, soaked overnight
  • 1 bunch spinach, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3-4 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil
  • 4 cups water

Instructions

  1. Heat oil in a large pot and add cumin seeds. Let them splutter.
  2. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
  3. Add chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates.
  4. Add the soaked chickpeas and water. Cover and cook until the chickpeas are tender.
  5. Add the chopped spinach and cook for another 5-7 minutes until the spinach is wilted.
  6. Adjust the seasoning and serve hot.
