Chana Palak Bai (chickpea And Spinach Stew)
Chana Palak Bai is a traditional Tripuri dish that combines the goodness of chickpeas and spinach in a flavorful stew. This hearty and nutritious stew is perfect for a comforting meal.
Ingredients
- 2 cups chickpeas, soaked overnight
- 1 bunch spinach, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 3-4 garlic cloves, minced
- 1-inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons oil
- 4 cups water
Instructions
- Heat oil in a large pot and add cumin seeds. Let them splutter.
- Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Add chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates.
- Add the soaked chickpeas and water. Cover and cook until the chickpeas are tender.
- Add the chopped spinach and cook for another 5-7 minutes until the spinach is wilted.
- Adjust the seasoning and serve hot.
