Chana Saag (creamy Chickpea And Spinach Curry)

Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1/4 tsp cayenne pepper
- 4 cups fresh spinach leaves
- 1/2 cup coconut milk
- Salt to taste
- 2 tbsp oil
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger. Sauté for a minute until fragrant.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Stir in the coriander powder, turmeric powder, garam masala, and cayenne pepper. Cook for a couple of minutes.
- Add the chickpeas and mix well. Cook for 5 minutes.
- Add the fresh spinach leaves and cook until they wilt.
- Pour in the coconut milk and simmer for 5 minutes.
- Season with salt to taste.
- Chana Saag is ready to be served hot with rice or naan.
