Chana Saag (hazaragi Chickpea And Spinach Curry)

Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 lb fresh spinach, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 2 cups water
Instructions
- Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
- Stir in the tomatoes and cook until they are soft and the oil starts to separate.
- Add the coriander powder, turmeric, red chili powder, and salt. Cook for a few minutes.
- Add the chopped spinach and cook until wilted.
- Stir in the cooked chickpeas and water. Simmer for 15-20 minutes.
- Sprinkle garam masala and simmer for another 5 minutes.
- Adjust the seasoning and serve hot with rice or naan.
