Ingredients

  • 500g pork intestines, cleaned and cut into bite-sized pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon sugar
  • 1 tablespoon Sichuan peppercorns
  • 4 cloves garlic, minced
  • 2 green onions, chopped
  • 3 tablespoons chili oil
  • 1 tablespoon black vinegar
  • Salt to taste

Instructions

  1. In a large pot, bring water to a boil and blanch the pork intestines for 5 minutes. Drain and set aside.
  2. In a separate bowl, mix together the soy sauce, Shaoxing wine, and sugar. Set aside.
  3. In a wok or large skillet, heat the chili oil over medium heat. Add the Sichuan peppercorns and cook until fragrant, about 1 minute.
  4. Add the minced garlic and chopped green onions to the wok and stir-fry for 2 minutes.
  5. Add the blanched pork intestines to the wok and stir-fry for 5 minutes.
  6. Pour in the soy sauce mixture and black vinegar. Stir to combine and bring to a simmer.
  7. Reduce the heat to low, cover the wok, and let the pork intestines braise for 45 minutes, stirring occasionally.
  8. Season with salt to taste and serve hot.
