Chao Ga

Ingredients

  • 1 cup jasmine rice
  • 6 cups chicken broth
  • 1 lb boneless, skinless chicken thighs, thinly sliced
  • 1 inch ginger, peeled and thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • Salt and pepper to taste
  • Green onions, thinly sliced, for garnish
  • Fried shallots, for garnish

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the rice, ginger, and garlic to the pot. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  3. Add the sliced chicken thighs and fish sauce to the pot. Continue to simmer for an additional 20-30 minutes, or until the rice has broken down and the chicken is fully cooked.
  4. Season with salt and pepper to taste.
  5. Serve the chao ga hot, garnished with sliced green onions and fried shallots.
