Chao Gan Si is a classic Anhui dish that features stir-fried pork liver with leeks. This dish is known for its tender pork liver and aromatic leeks, creating a flavorful and nutritious meal.
Ingredients
- 300g pork liver, thinly sliced
- 2 leeks, white and light green parts only, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 tablespoons vegetable oil
Instructions
- Marinate the pork liver with soy sauce, Shaoxing wine, sugar, salt, and white pepper for 10 minutes.
- Heat the vegetable oil in a wok or skillet over high heat. Add the garlic and stir-fry for 30 seconds.
- Add the marinated pork liver and stir-fry for 2-3 minutes until just cooked through. Remove from the wok and set aside.
- In the same wok, add a little more oil if needed, then stir-fry the leeks for 2-3 minutes until tender.
- Return the cooked pork liver to the wok, stir to combine with the leeks, and heat through.
- Transfer to a serving dish and serve hot.
