Chao Gan Si (stir-fried Pork Liver With Leeks)

Ingredients

  • 300g pork liver, thinly sliced
  • 2 leeks, white and light green parts only, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Marinate the pork liver with soy sauce, Shaoxing wine, sugar, salt, and white pepper for 10 minutes.
  2. Heat the vegetable oil in a wok or skillet over high heat. Add the garlic and stir-fry for 30 seconds.
  3. Add the marinated pork liver and stir-fry for 2-3 minutes until just cooked through. Remove from the wok and set aside.
  4. In the same wok, add a little more oil if needed, then stir-fry the leeks for 2-3 minutes until tender.
  5. Return the cooked pork liver to the wok, stir to combine with the leeks, and heat through.
  6. Transfer to a serving dish and serve hot.
