Chao Hu Tao Ren Xia (stir-fried Prawns With Cashew Nuts)

Ingredients

  • 400g prawns, peeled and deveined
  • 100g cashew nuts
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 spring onions, chopped
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper

Instructions

  1. Heat 1 tablespoon of oil in a wok over high heat.
  2. Add the prawns and stir-fry for 2-3 minutes until they turn pink. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok and add the garlic, bell peppers, and cashew nuts. Stir-fry for 2 minutes.
  4. Return the prawns to the wok, then add the soy sauce, sugar, salt, and white pepper. Stir-fry for another 2 minutes.
  5. Sprinkle with chopped spring onions and stir to combine.
  6. Transfer to a serving dish and serve hot.
