Ingredients
- 400g prawns, peeled and deveined
- 100g cashew nuts
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 spring onions, chopped
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp white pepper
Instructions
- Heat 1 tablespoon of oil in a wok over high heat.
- Add the prawns and stir-fry for 2-3 minutes until they turn pink. Remove from the wok and set aside.
- Heat the remaining oil in the wok and add the garlic, bell peppers, and cashew nuts. Stir-fry for 2 minutes.
- Return the prawns to the wok, then add the soy sauce, sugar, salt, and white pepper. Stir-fry for another 2 minutes.
- Sprinkle with chopped spring onions and stir to combine.
- Transfer to a serving dish and serve hot.
