Chao Niu He (stir-fried Beef With Broccoli)
Chao Niu He, or Stir-Fried Beef with Broccoli, is a classic dish from Putian (Henghwa) Cuisine. It features tender beef and crisp broccoli stir-fried in a savory sauce, making it a delicious and nutritious meal.
Ingredients
- 1 lb flank steak, thinly sliced
- 1 lb broccoli, cut into florets
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- 1/2 teaspoon sugar
- 1/4 cup beef broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Marinate the sliced beef with soy sauce, cornstarch, and a pinch of salt for 15 minutes.
- In a small bowl, mix the oyster sauce, sugar, and beef broth. Set aside.
- Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the broccoli and stir-fry for 2-3 minutes until bright green and slightly tender. Remove from the wok and set aside.
- Heat the remaining oil in the wok. Add the minced garlic and stir-fry until fragrant.
- Add the marinated beef to the wok and stir-fry until it is no longer pink. Return the broccoli to the wok.
- Pour the oyster sauce mixture over the beef and broccoli. Stir-fry for another 1-2 minutes until the sauce thickens and coats the ingredients evenly.
- Season with black pepper and adjust the seasoning with salt if needed.
- Transfer to a serving dish and serve hot with steamed rice.
