Chaozhou Chau Mien, also known as Chiuchow-style Fried Rice Vermicelli, is a classic dish from the Chiuchow Cuisine, known for its delicate flavors and simple yet elegant presentation.

Chaozhou Chau Mien (chiuchow-style Fried Rice Vermicelli)

Ingredients

  • 200g rice vermicelli
  • 2 eggs, beaten
  • 100g shrimp, peeled and deveined
  • 50g char siu (Chinese BBQ pork), diced
  • 1/2 cup bean sprouts
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sugar
  • 1/4 tsp white pepper
  • 2 green onions, chopped
  • 2 tbsp vegetable oil

Instructions

  1. Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok, then add the shrimp, char siu, and garlic. Stir-fry for 2-3 minutes until the shrimp is pink and cooked through.
  4. Add the soaked rice vermicelli, bean sprouts, soy sauce, oyster sauce, sugar, and white pepper to the wok. Stir-fry for 3-4 minutes until the vermicelli is heated through and well coated with the sauce.
  5. Return the scrambled eggs to the wok and toss to combine with the vermicelli mixture.
  6. Garnish with chopped green onions and serve hot.
