Chaozhou Chau Mien (chiuchow-style Fried Rice Vermicelli)
Chaozhou Chau Mien, also known as Chiuchow-style Fried Rice Vermicelli, is a classic dish from the Chiuchow Cuisine, known for its delicate flavors and simple yet elegant presentation.
Ingredients
- 200g rice vermicelli
- 2 eggs, beaten
- 100g shrimp, peeled and deveined
- 50g char siu (Chinese BBQ pork), diced
- 1/2 cup bean sprouts
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 2 green onions, chopped
- 2 tbsp vegetable oil
Instructions
- Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
- Heat 1 tablespoon of vegetable oil in a wok over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining oil in the wok, then add the shrimp, char siu, and garlic. Stir-fry for 2-3 minutes until the shrimp is pink and cooked through.
- Add the soaked rice vermicelli, bean sprouts, soy sauce, oyster sauce, sugar, and white pepper to the wok. Stir-fry for 3-4 minutes until the vermicelli is heated through and well coated with the sauce.
- Return the scrambled eggs to the wok and toss to combine with the vermicelli mixture.
- Garnish with chopped green onions and serve hot.
