Chaozhou Sui Kau, also known as Chiuchow-style Steamed Pork and Shrimp Dumplings with Soup, is a traditional dish from the Chiuchow Cuisine. These delicate dumplings are filled with a flavorful mixture of pork and shrimp, and are served with a clear and aromatic soup.
Ingredients
- 200g ground pork
- 200g shrimp, peeled and deveined
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 1/4 cup water chestnuts, finely chopped
- 20 square dumpling wrappers
- 4 cups chicken broth
- 2 green onions, chopped
Instructions
- In a bowl, mix together the ground pork, shrimp, soy sauce, sesame oil, sugar, white pepper, and water chestnuts.
- Place a small spoonful of the filling in the center of each dumpling wrapper. Moisten the edges with water, then fold the wrapper in half to form a triangle, pressing the edges to seal.
- Bring the chicken broth to a boil in a large pot. Add the green onions.
- Place the dumplings in a steamer basket lined with parchment paper. Steam for 8-10 minutes, until the filling is cooked through.
- Serve the dumplings in bowls with the hot broth.
