Ingredients
- 6 pieces of firm tofu
- 1 eggplant, sliced
- 1 red bell pepper, sliced
- 200g ground pork
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Prepare the tofu by cutting a slit in the center of each piece to create a pocket for stuffing.
- Mix the ground pork, garlic, soy sauce, sesame oil, and cornstarch in a bowl.
- Stuff the tofu, eggplant, and bell pepper with the pork mixture.
- In a pot, bring the vegetable broth to a boil and add the stuffed ingredients.
- Simmer for 30 minutes or until the ingredients are cooked through.
- Season with salt and pepper to taste.
