Ingredients

  • 6 pieces of firm tofu
  • 1 eggplant, sliced
  • 1 red bell pepper, sliced
  • 200g ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Prepare the tofu by cutting a slit in the center of each piece to create a pocket for stuffing.
  2. Mix the ground pork, garlic, soy sauce, sesame oil, and cornstarch in a bowl.
  3. Stuff the tofu, eggplant, and bell pepper with the pork mixture.
  4. In a pot, bring the vegetable broth to a boil and add the stuffed ingredients.
  5. Simmer for 30 minutes or until the ingredients are cooked through.
  6. Season with salt and pepper to taste.
