Char Kway Teow Sensation

Ingredients

  • 12 oz fresh rice noodles
  • 4 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 4 Chinese sausages, sliced
  • 8 oz prawns, deveined
  • 4 eggs
  • 4 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 2 tbsp sweet soy sauce
  • 1 tsp fish sauce
  • 1/2 tsp white pepper
  • 4 green onions, cut into 2-inch lengths
  • Bean sprouts and chives for garnish

Instructions

  1. Soak the fresh rice noodles in warm water for 10 minutes, then drain.
  2. Heat 2 tbsp of vegetable oil in a wok over high heat. Add garlic and stir-fry until fragrant.
  3. Add Chinese sausages and prawns, and stir-fry until the prawns turn pink. Push the ingredients to one side of the wok.
  4. Crack the eggs into the wok and scramble until just set. Mix the eggs with the other ingredients.
  5. Add the drained noodles, dark soy sauce, light soy sauce, sweet soy sauce, fish sauce, and white pepper. Stir-fry to combine all the ingredients.
  6. Add green onions and stir-fry for another 2 minutes.
  7. Garnish with bean sprouts and chives before serving.
