Char Kway Teow Sensation
Char Kway Teow is a popular stir-fried noodle dish in Singaporean Chinese cuisine. It is known for its smoky flavor and combination of savory ingredients.
Ingredients
- 12 oz fresh rice noodles
- 4 tbsp vegetable oil
- 3 cloves garlic, minced
- 4 Chinese sausages, sliced
- 8 oz prawns, deveined
- 4 eggs
- 4 tbsp dark soy sauce
- 2 tbsp light soy sauce
- 2 tbsp sweet soy sauce
- 1 tsp fish sauce
- 1/2 tsp white pepper
- 4 green onions, cut into 2-inch lengths
- Bean sprouts and chives for garnish
Instructions
- Soak the fresh rice noodles in warm water for 10 minutes, then drain.
- Heat 2 tbsp of vegetable oil in a wok over high heat. Add garlic and stir-fry until fragrant.
- Add Chinese sausages and prawns, and stir-fry until the prawns turn pink. Push the ingredients to one side of the wok.
- Crack the eggs into the wok and scramble until just set. Mix the eggs with the other ingredients.
- Add the drained noodles, dark soy sauce, light soy sauce, sweet soy sauce, fish sauce, and white pepper. Stir-fry to combine all the ingredients.
- Add green onions and stir-fry for another 2 minutes.
- Garnish with bean sprouts and chives before serving.
