Char Kway Teow (Stir-Fried Rice Noodles with Shrimp)

Ingredients

  • 12 oz (340g) rice noodles
  • 1/2 lb (225g) large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 4 stalks green onions, chopped
  • 3 Tbsp soy sauce
  • 2 Tbsp sweet soy sauce (kecap manis)
  • 1 Tbsp chili paste
  • 1/2 cup bean sprouts
  • 1/4 cup vegetable oil

Instructions

  1. Soak the rice noodles in hot water for 8-10 minutes until softened. Drain and set aside.
  2. Heat 2 tablespoons of vegetable oil in a wok or large skillet over high heat. Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove the shrimp from the wok and set aside.
  3. Heat the remaining oil in the wok. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  4. Push the garlic to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set, then mix with the garlic.
  5. Add the soaked rice noodles, soy sauce, sweet soy sauce, and chili paste to the wok. Stir-fry for 2-3 minutes until the noodles are well-coated and heated through.
  6. Add the cooked shrimp, chopped green onions, and bean sprouts to the wok. Stir-fry for an additional 1-2 minutes until everything is well combined and heated through.
  7. Transfer the stir-fried rice noodles with shrimp to a serving dish and garnish with additional chopped green onions, if desired.
