Ingredients
- 12 oz (340g) rice noodles
- 1/2 lb (225g) large shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 eggs, lightly beaten
- 4 stalks green onions, chopped
- 3 Tbsp soy sauce
- 2 Tbsp sweet soy sauce (kecap manis)
- 1 Tbsp chili paste
- 1/2 cup bean sprouts
- 1/4 cup vegetable oil
Instructions
- Soak the rice noodles in hot water for 8-10 minutes until softened. Drain and set aside.
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over high heat. Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove the shrimp from the wok and set aside.
- Heat the remaining oil in the wok. Add the minced garlic and stir-fry for 30 seconds until fragrant.
- Push the garlic to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set, then mix with the garlic.
- Add the soaked rice noodles, soy sauce, sweet soy sauce, and chili paste to the wok. Stir-fry for 2-3 minutes until the noodles are well-coated and heated through.
- Add the cooked shrimp, chopped green onions, and bean sprouts to the wok. Stir-fry for an additional 1-2 minutes until everything is well combined and heated through.
- Transfer the stir-fried rice noodles with shrimp to a serving dish and garnish with additional chopped green onions, if desired.
