Char Kway Teow Twist
Char Kway Teow is a popular stir-fried noodle dish in Singaporean cuisine. This recipe puts a twist on the traditional dish by adding a few extra ingredients for a unique flavor.
Ingredients
- 300g fresh flat rice noodles
- 150g prawns, peeled and deveined
- 100g Chinese sausage, sliced
- 3 eggs, beaten
- 2 cloves garlic, minced
- 2 tablespoons dark soy sauce
- 2 tablespoons light soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 teaspoon chili paste
- 1 cup bean sprouts
- 2 tablespoons vegetable oil
Instructions
- Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
- Heat 1 tablespoon of oil in a wok over high heat. Add the prawns and Chinese sausage, and stir-fry for 2-3 minutes until the prawns are pink and cooked through. Remove from the wok and set aside.
- Heat the remaining oil in the wok. Add the garlic and stir-fry for 30 seconds.
- Add the beaten eggs and stir-fry until they are just set.
- Add the drained noodles, dark soy sauce, light soy sauce, fish sauce, sugar, and chili paste. Stir-fry for 2-3 minutes.
- Add the prawns, Chinese sausage, and bean sprouts. Stir-fry for another 2 minutes until everything is well combined and heated through.
- Transfer to a serving dish and serve hot.
