Char Kway Teow Twist

Char Kway Teow is a popular stir-fried noodle dish in Singaporean cuisine. This recipe puts a twist on the traditional dish by adding a few extra ingredients for a unique flavor.

Char Kway Teow Twist

Ingredients

  • 300g fresh flat rice noodles
  • 150g prawns, peeled and deveined
  • 100g Chinese sausage, sliced
  • 3 eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons dark soy sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon chili paste
  • 1 cup bean sprouts
  • 2 tablespoons vegetable oil

Instructions

  1. Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
  2. Heat 1 tablespoon of oil in a wok over high heat. Add the prawns and Chinese sausage, and stir-fry for 2-3 minutes until the prawns are pink and cooked through. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok. Add the garlic and stir-fry for 30 seconds.
  4. Add the beaten eggs and stir-fry until they are just set.
  5. Add the drained noodles, dark soy sauce, light soy sauce, fish sauce, sugar, and chili paste. Stir-fry for 2-3 minutes.
  6. Add the prawns, Chinese sausage, and bean sprouts. Stir-fry for another 2 minutes until everything is well combined and heated through.
  7. Transfer to a serving dish and serve hot.
