Ingredients
- 1 lb beef, thinly sliced
- 4 large potatoes, peeled and sliced
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1/4 cup vegetable oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the beef slices and cook until browned, then remove from the skillet and set aside.
- In the same skillet, sauté the onion, garlic, and bell pepper until softened.
- Add the tomatoes, cumin, salt, and pepper, and cook for a few minutes.
- Add the beef broth and bring to a simmer.
- Add the sliced potatoes to the skillet, arranging them in an even layer.
- Place the browned beef slices on top of the potatoes.
- Cover the skillet and cook for 30-40 minutes, or until the potatoes are tender and the beef is cooked through.
