Ingredients

  • 1 lb beef, thinly sliced
  • 4 large potatoes, peeled and sliced

  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup vegetable oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the beef slices and cook until browned, then remove from the skillet and set aside.
  3. In the same skillet, sauté the onion, garlic, and bell pepper until softened.
  4. Add the tomatoes, cumin, salt, and pepper, and cook for a few minutes.
  5. Add the beef broth and bring to a simmer.
  6. Add the sliced potatoes to the skillet, arranging them in an even layer.
  7. Place the browned beef slices on top of the potatoes.
  8. Cover the skillet and cook for 30-40 minutes, or until the potatoes are tender and the beef is cooked through.
