Charquican De Repollo (chilean-style Stuffed Cabbage Rolls)

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1 cup beef broth

Instructions

  1. Boil a large pot of water and blanch the whole cabbage for 5 minutes. Remove the cabbage from the water and carefully peel off the leaves. Set aside.
  2. In a bowl, mix the ground beef, cooked rice, chopped onion, minced garlic, paprika, cumin, salt, and pepper.
  3. Place a spoonful of the beef mixture onto each cabbage leaf and roll it up, tucking in the sides to create a neat roll.
  4. In a large pot, pour the tomato sauce and beef broth. Place the stuffed cabbage rolls in the pot, cover, and simmer for 1 hour.
