Charro Beans

Ingredients

  • 1 lb dried pinto beans
  • 6 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 jalapeño, diced
  • 8 oz bacon, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse the pinto beans and place them in a large pot with water. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. In a skillet, cook the bacon until crispy. Add the onion, garlic, and jalapeño, and cook until softened.
  3. Add the bacon mixture, diced tomatoes, cumin, and chili powder to the pot of beans. Season with salt and pepper.
  4. Continue to simmer for another hour, or until the beans are tender and the flavors have melded together.
  5. Serve hot as a side dish or main course.
