Charro Beans
Charro beans, also known as cowboy beans, are a traditional Mexican dish packed with flavor and hearty ingredients. This recipe is perfect for a comforting meal or as a side dish for a barbecue.
Ingredients
- 1 lb dried pinto beans
- 6 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 jalapeño, diced
- 8 oz bacon, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Rinse the pinto beans and place them in a large pot with water. Bring to a boil, then reduce heat and simmer for 1 hour.
- In a skillet, cook the bacon until crispy. Add the onion, garlic, and jalapeño, and cook until softened.
- Add the bacon mixture, diced tomatoes, cumin, and chili powder to the pot of beans. Season with salt and pepper.
- Continue to simmer for another hour, or until the beans are tender and the flavors have melded together.
- Serve hot as a side dish or main course.
