Chashushuli Magic (ჩაშუშული)

Ingredients

  • 1 kg beef, cubed
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 1 bell pepper, sliced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp marigold petals
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 cups beef broth
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onions, tomatoes, bell pepper, and garlic. Cook until the vegetables are softened.
  3. Stir in the tomato paste, paprika, coriander, marigold petals, cayenne pepper, salt, and pepper.
  4. Pour in the beef broth and bring the mixture to a boil.
  5. Reduce the heat, cover the pot, and let the stew simmer for 1 hour.
  6. Once the beef is tender and the flavors have melded, remove from heat and garnish with fresh parsley.
