Ingredients
- 1 kg beef, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, diced
- 1 bell pepper, sliced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp coriander
- 1 tsp marigold petals
- 1/2 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 cups beef broth
Instructions
- In a large pot, sauté the onions and garlic until golden.
- Add the beef cubes and brown on all sides.
- Stir in the tomato paste, paprika, coriander, and marigold petals.
- Add the tomatoes, bell pepper, and beef broth. Season with salt and pepper.
- Cover and simmer for 1 hour, or until the beef is tender.
- Sprinkle with fresh parsley before serving.
