Хинкал (Chechen Dumplings) are a traditional dish from Chechen cuisine, made with a flavorful meat filling wrapped in a thin dough and boiled to perfection. These dumplings are a popular comfort food in the region and are often enjoyed with a dollop of sour cream or a spicy dipping sauce.

Chechen Dumplings (Хинкал)

Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 cup water
  • 3 cups all-purpose flour
  • 1 cup water
  • 1/2 tsp salt

Instructions

  1. In a large bowl, mix together the ground beef, onion, garlic, salt, black pepper, cumin, and 1/4 cup of water. Set aside.
  2. In a separate bowl, combine the flour, water, and salt. Knead the dough until smooth, then let it rest for 15 minutes.
  3. Roll out the dough on a floured surface and cut it into small circles.
  4. Place a spoonful of the meat mixture in the center of each dough circle. Fold the edges of the dough up around the filling, pinching them together at the top to form a small bundle.
  5. Bring a large pot of water to a boil and carefully drop the dumplings in. Cook for about 10-12 minutes, or until the dough is cooked through.
  6. Remove the Хинкал from the water with a slotted spoon and serve hot.
